Delicious pan-fried fillet of plaice in breadcrumbs

There's nothing better than plaice on a hot summer day. Whether it's down at the harbor, in a fancy restaurant or at home, fillet of plaice is a fantastic meal that can make any stomach happy.

Plaice fillet with dill potato salad and peas

For: 4 people

Time: 40 min.

Ingredients

  • 8 plaice fillets
  • 100g rye flour, preferably wholemeal
  • 75g butter
  • 1 kg small potatoes
  • 2½ dl sour cream
  • 150g mayonnaise
  • 50 g dill
  • 2 tbsp vinegar
  • 100g peas, preferably fresh or frozen
  • Salt and pepper

Here's how to do it

  1. Clean the potatoes of any dirt as they do not need to be peeled. Boil the potatoes in lightly salted water until tender, drain and leave to cool.
  2. Mix the crème fraiche, mayonnaise and vinegar together in a bowl. Chop the dill and mix in. Season to taste with salt and pepper.
  3. Shell the peas (if fresh) or boil them (if frozen) and mix with the sour cream mixture and the cooled potatoes. Refrigerate the potato salad until serving.
  4. Turn the plaice fillets in the rye flour on both sides and fry for 1 minute on each side in a pan over high heat in plenty of butter.
  5. Serve the plaice fillet with a side of potato salad and garnish with dill and peas. Enjoy!

Where and when to find the best fillet of plaice?

The famous fillet of plaice is available most months of the year, but its heyday is in early summer and fall. The appearance of plaice starts to slowly increase from January, but only picks up in April, peaks in May and June, and then decreases again in July, before peaking slightly again from September through to November.

There are plenty of opportunities to get your hands on a plaice fillet, however, it's difficult to find these in supermarkets, so it's a good idea to look at your local fishmonger, which we also recommend.

By buying your fillet of plaice from your local fishmonger, you're supporting the locals, including the fishmonger, its employees and, most importantly, the fishermen who pull the fish out of the water. So there's no reason not to support your local community by shopping local.
